Run Happy!

The
is 
scheduled

the weekend

April 26-27


Although
this
1/2 
and
full marathon
is
fairly new
it
has become
wildly
popular

you 
run
through
Downton..
whoops...
downtown SLO

around
through
the rolling hills
of 
Edna Valley

back
and around

and 
finish
at
 the
iconic
Madonna Inn

last year
 at
Petit Soleil
we
gifted
our
guest runners
with
little 
goodie bags
of
fruit
water
and
homemade granola bars...

this year
the
granola
bars
will be
even more
    energizing
        and 
          even more
                      delicious



these
bad boys 
are 
chalk full
of 
nuts and seeds
dried fruit
oats
chocolate
peanut butter
and honey
(hey,gluten free runners!  we will use gluten free oats for you)

you need a 9x13 pan
spray or rub with
coconut oil

in a 350 degree oven
on a cookie sheet
toast:
3 c. oats (regular or gluten free)
1/2 c. flax seeds
1/2 c. sesame seeds
 for about 12 minutes

spoon into large bowl and set aside

in same sheet pan toast:
1 c. whole raw almonds
  for about 10 minutes

cool and chop into smallish pieces
    add to oats 

coarsely chop 2 cups Medjool dates and add
to oats along with
 1 cup semi sweet chocolate chips
and
1 cup coarsely chopped roasted peanuts
mix

In a small saucepan
combine
1/2 c. all natural peanut butter
and
1/2 c. honey
warm until melted

and
add to oat/nut/fruit/seed mixture

mix thoroughly
and 
press into
9"x13" pan

chill in fridge for about an hour or so
and cut into
desired
sizes or shapes

A Delicious Little Nibble

If I had kids at home
   these little
     healthy nibbles
       would always
          be
            hanging
               around
                  in the
                     fridge

they
are
delish
and
oh   so  easy
to
make
....

dates
about a cup

tahini    coconut oil    honey
1/2 c. tahini (sesame butter)
                                              2 TBS coconut oil
                                  2 TBS honey

and cardamom
1/2 tsp

these few ingredients
go
altogether
into
your
food processor
whizzed around
until
a paste
forms

and spread
into
loaf pan
lined 
with
parchment paper
and
sprinkled
with flaky sea salt

pop
pan into freezer
for about
an 
hour
and
there you go!
no sugar
no gluten
good-for-you coconut oil


to switch
these
nibbles up
.......cinnamon instead of cardamom
.......roll into little balls instead of squares
.......top with coconut instead of sea salt
